Okay, I don't know how to beat around the bush, but I don't want you to get scared and give the computer an icky face pertaining to this recipe.
Becky Fuchs was my Relief Society President in California for a short time. I received the Ward Cookbook (which by the way can I say is so different than any Utah Ward cookbook?? There were VEGETARIAN dishes in this book! Complete opposite in a Utah cookbook, anyways..) We have made Becky's dish several times and love how simple and easy it is. I almost always have all the ingredients on hand and have substituted or gone without with some of them. If you have Amazon Prime and plan ahead, you can buy barley from there and it will be to your house in a jiffy!

Barley Bake
1 cup barley
3 1/3 cup chicken broth
1 cup scallions (I've used an onion before instead)
1/3 cup toasted pine nuts
1/4 cup butter (I've used olive oil before)
1/4 cup chopped parsley (flat leaf is what I always prefer according to Americas Test Kitchen, could use cilantro if have that on hand)
Saute pine nuts; remove with slotted spoon. Brown barley and scallions in butter. Add pine nuts, in 9x12 casserole dish with barley and scallions, chopped parsley, salt, pepper, and broth. Baker for 50 minutes to 1 hour at 350 degrees.
