It's my dear friends birthday today!! I can't quite remember the first time we met, but I do know I was assigned to visit teach her. She was expecting her first baby and I had just moved to Northern California. I experienced a little culture shock when Karren announced she was just doing cloth diapers for her baby. I had never heard of that concept or anyone who had done that! California was so great for me because it opened up my eyes to the world and different way of doing things. Half of my heart will always be in Northern California.
Karren has a great passion for food and unique combinations. Her palate enjoys different and exotic combinations. Karren told me about this cake. And for some reason I had an excuse to make it. I want to say a baptism? Since it wasn't for a humungo crowd (I think this recipe is for a four layered cake), I read through the comments and saw that it worked to make these into cupcakes. They were super good and I remember getting compliments. I love chocolate and raspberry together. Note: for the "hot brewed coffee" part Karren, I, and some of the notes/comments say that you can infuse raspberry extract in hot water instead. I will probably do this again, however have found out since then about the product Pero. Its like a substitute for coffee and I use it in my favorite brownie recipe that calls for coffee.
