I think I've mentioned this before, but I have this problem. I grew up with a mom that made lots of gourmet/top chef recipes. So I have high expectations. This is one of those recipes that is simple, easy and still yummy, but I almost cringe to post recipes like this because I know there is nothing special to them and they are not gourmet. Know that this is a great recipe. It is so easy and you probably have (or should in my mind) most ingredients at your house. It's my go to if you're in a hurry, haven't gone to the store all day. If you think you'll make this a lot, one of our freezer staples is a big bag of frozen veggies from Costco and/or trader joes. Makes this recipe a lot easier.
2 cups leftover rice/quinoa (day old is highly preferable so it will stick together)
3 tablespoons butter
2 tablespoons soy sauce (I like Braggs liquid amino acid, soy sauce alternative)
2 teaspoons worcestershire sauce
1/2 teaspoon black pepper
1/4 teaspoon kosher salt (or 1/8 tsp iodized)
1/2 diced yellow onion
1 cup of whatever frozen or fresh vegetables you have on hand. (The ones I think are almost necessary to have with it if you're doing a asian/fried rice recipe would be: carrot and mushroom).
2 cups leftover meat, diced (or not, it is fine without meat).
1 egg (we like to do two or three, crack the egg of course before putting in crockpot).
sesame seeds for garnish (optional)
Put all ingredients in crockpot, but with the eggs, just crack in and let it sit on top with no stirring, then I think when it gets closer to being done, you can move around the egg. Cook on high 2-3 hours or low 3-4 hours.
