Well my birthday is tomorrow and I already made my birthday cake. Yes there are plenty of bakeries where I could buy mine own, but I don't have a go-to, cake that I know I'll love. So sometimes you just have to make it to know it will turn out well :) I have lived long enough to know about me that one of my favorite treats is a chocolate chip cookie right out of the oven. (Just like my mom) It has to be warm and a good quality cookie. Heavenly.. Hence this cake.
Luckily I have made this cake before so I knew it would turn out. I made this for the Relief Society Birthday Party last year in good old Mountain View, California. I miss that ward and all the memories, but I will keep positive...
This recipe is Kelsey Nixon's ( a chef on Food Network/Cooking Channel). And it can be altered depending on how thick you want the cookies. For my birthday, I did three layers, but as you can see below, I did two for this cake. Kelsey's recipe also calls for a cream cheese frosting but I have to say I love the almond buttercream that I've done now twice with this cake. I've gotten a few compliments on the good combo. Another tip that I prefer is the chocolate chip chunks that you can see and is called for. Harmon's did have them if you live in Utah, and Nestle does have chunks (although Harmons did not have the nestle (cheaper kind) at store).
