My awesome sister-in-law, Melanies birthday is today. I'm so grateful to have her in the family. Melanie eats super healthy but don't let this recipe scare you. They are delicious! Remember that I would never post a recipe I didn't love :).
As I nannied for a family in California over October General Conference, I thought I'd be brave and try this recipe out. The kids loved it!! The youngest, one and a half year old, called these donuts. He kept asking for "more donuts." Hilarious. I've made it a few times and is now my go to for the pumpkin season!
Pumpkin muffins
Ingredients:
3/4 cup pumpkin puree
1 cup almond butter (I'm sure this would still work with peanut butter, haven't tried it though).
1/3 cup honey or maple syrup
2 whole eggs
1 tbsp pumpkin pie spice *you can always make your own pumpkin pie spice by using 2 tsp ground cinnamon, 1/2 tsp cinnamon, 1/2 tsp ground ginger, and 1/4 tsp ground nutmeg.
1/2 tsp baking soda
tiny pinch of sea salt
1/3 cup Cacao chips (or chocolate chips, even mini kind you could use, or white chocolate chips may be yummy in this).
*For your first time making this, I would do half or only a few with chocolate chips. I still need to decide if I prefer it with chocolate chips or not (I love chocolate, just not sure about the flavor combo).
Instructions:
1. Combine all ingredients until batter is smooth. If using chocolate chips, fold them in last.
2. Preheat oven to 350 F. Grease or spray your muffin tin with coconut oil or use liners.
3. Bake for about 20 minutes, may take longer, need to take note next time I make these.
