Well, I wish I had more go-to super bowl recipes but all I see and have found are dips and lets be honest, not so healthy things..... So I'll be on the lookout for the future. However, I do have a dip that my family loves. Its our go-to, served at most holidays, easy, and filling.
The Rotell Dip...
1 lb ground beef, browned and drained. (I have used ground turkey before and is a fine substitute).
1 14 oz can Rotel tomatoes (the jar with tomatoes, green chilies, and I think lime juice?)
1 8 oz pkg. cream cheese (could do half velveeta and half cream cheese, I like all cream cheese)
1. Cut cream cheese into 1-inch cubes.
2. Place cream cheese and tomatoes in small slow-cooker.
3.Cover and cook on High for 1-2 hours.
4. Stir until creamy.
5. Serve as a dip for chips, crackers, or vegetables. (We have usually done tortilla chips).
