Lots of birthdays lately! My dear dear friend Tiffany's birthday is today. My husband home taught her when we lived in Las Vegas as she became a new member of the church and encouraged her to go to the singles ward. She was of course nervous to go but did and happily found her perfect husband!! (Tiffany I still have a thank you card kept that you gave Roger, so sweet).
They now have two sweet girls and I'm sure is doing a fabulous job!!
Tiffany is one of those people you never forget and leaves an imprint on you. She is so special. She has a excitement for life, the gospel, and food :). Tiffany I wish I could see you more often. Know I wish you all the best and happy 30th birthday!!!!
I made these muffins and they were gobbled up at a family party!
Banana Chocolate Chip Muffins
2 cups flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 cup white sugar
1 cup frozen chocolate chips (then the chocolate chips won't melt, had this problem when made at first)
1/3 cup oil (think I Chanel did coconut oil when made)
4 RIPE bananas (almost completely brown skins make a sweeter muffin, yellow skins make a more banana flavored muffin)
1/4 cup water
1 tsp. vanilla
Preheat the oven to 350 degrees.
Beat the sugar and the oil until well combined. Mash the bananas separately and then add to the sugar/oil mixture. Stir in the water, vanilla and chocolate chips. In a separate bowl, whisk together the flour, salt and baking soda and then stir into the wet ingredients until just incorporated.
Put into greased or lined muffin cups. Makes 12-15 muffins.
Bake for 20 minutes, or until a toothpick comes out clean.
