I watched an episode of the Kitchen on Food Network the other day and suddenly had an epiphany. Geoffrey Zakarian (love his classiness by the way) made this asparagus soup but used only the stalky ends or about midway up the asparagus! I loved the idea because I had asparagus in my fridge and kept the ends of my stalk I used the other day. I had never heard of using the ends in any way before. It is cooked down and then blended in the blender so I don't see any dissatisfaction with not using the tips of asparagus, and then you can use that for another dish!!
Asparagus presentation always looks great, relatively inexpensive when in season (.99 a pound), goes well with almost any main dish, and screams Spring to me! Love taking advantage of in seasoned food.
