Today my dear friend, Valerie came over to help me with meal prep for the baby.
Here are my go to's...
1. Hard boiled eggs
2. Energy balls (were so helpful during pregnancy and I'm sure breastfeeding as well). Recipe here: and I'm doing a double batch for sure! These never last super long. I store them in the freezer. http://www.unconventionalkitchen.com/healthy-homemade-energy-bites/
3. Frozen beans to have on hand (we buy dried beans and soak them overnight, I've never had frozen cooked beans on hand but would be nice to heat up and have as a snack or to add to dinners, etc.

5. My sister-in-law healthy waffles, (batter made and cooked, cooled, then put into freezer ziplock bags. If you'd like the recipe, comment and I'll send it to you. Its filled with buckwheat, oat groat flour, chia seeds, coconut oil, etc.)
There's so much more I should do and maybe will, but I know this is better than nothing! I have done a Trader Joes stock up and next week a Costco trip. Hopefully I can just last through: my last shower, write all the thank you cards, get my haircut and color in, and preferably Roger and I's getaway to Park City before baby comes.
